Fruit Cocktail Cake
 
 
1 1/2 cups white sugar
2 cups all purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 eggs, slightly beaten
14 oz can of fruit cocktail (not drained)

Combine the above ingredients with a whisk and pour into a 9"x 13" greased pyrex dish, and bake 350 degrees for 35 to 40 mins.

Meanwhile, bring the following ingredients to a boil:

3/4 cup white sugar
1/2 cup butter or margarine
1/2 cup milk
1 tsp vanilla

As soon as the cake is removed from the oven, pour hot syrup on top. Let topping saturate into the cake. Cut into squares and serve hot. Top with a generous dollop of whipped cream or vanilla ice cream.

P.S. Cake freezes well. Individual servings wrapped in foil can be reheated quickly during dinner.
