Steve's Pork 'n Beans Bread
 
 
1 cup raisins
1/2 cup boiling water
2 eggs
1 cup vegetable oil
2 cups white sugar
16 oz can Pork 'n Beans (14 oz okay too)
3 cups all purpose flour
1 tsp. cinnamon
1/2 tsp. baking powder
1 tsp baking soda
1 teaspoon vanilla
1 cup chopped walnuts

Pour boiling water over the raisins and set aside to cool. Beat eggs, oil, sugar and Pork 'n Beans with an electric mixer until smooth.

Stir dry ingredients together and add to the bean mixture. Beat until all is incorporated, adding vanilla and nuts. Lastly, add the raisons mixture, mix and stir well.

Pour batter into two greased loaf pans approximately 5"x 9".

Bake 325 degrees for 50 to 60 minutes. Test with skewer.

Slice when cooled and enjoy!

P.S. Can substitute Pork 'n Beans with:
Beans in Tomato Sauce or 2 cups of chopped apples.
