Shortbread Cookies
 
 
1 cup all purpose flour
1/2 cup cornstarch
1/2 cup icing sugar
3/4 cup butter or margarine

Put dry ingredients into your mixmaster bowl and stir with a fork to mix. Cut butter or margarine into cubes and add to bowl. Let sit for 30 minutes (more or less) to let butter soften. Drape a tea cloth over top of mixmaster bowl and turn speed on at slowest setting. This will keep flour from dancing out of the bowl! When danger of that has passed, increase to medium speed and beat until mixture forms a ball.

Break off pieces and roll into one inch balls. Place on a dry cookie sheet. Press tops gently with a fork to flatten.

Bake300 degrees for 20 minutes or until edges are lightly browned.

Yield is approximately 3 dozen.
